Ingredients for 6 people:

Capitone in damp

   
1 kgs. of capitone Wash the capitone, skin it, get away the head and cut it into bits. Before cooking it it recommends to hold it to bath in the vinegar with some leaf of laurel for an hour. In a saucepan with the oil make to brown the onion and the garlic minced, then add the capitone. When it is also browned pour the wine, add the parsley and after some minutes the tomatoes. Season with salt and pepper and fairies to cook.
  4 spoons of oil  
1 cloves of garlic
  1/2 glass of red wine  
1 onion
500 gs. of tomatoes
parsley
pepper and salt
